It's been a summer of heat. I know, I post alot about infused water, but I really just get so tired of regular water. This actually encourages me to buy fruit too. So if I have it on hand, I will eat it. If I don't I wont. This summer has been really hot and dehydration can be very dangerous. So what does every newscaster say DRINK YOU WATER. Water, water, water. I took the boredom out of my water today and made a big pitcher with strawberries, cucumbers and lemon slices. What's your favorite combination? (repossted from 8/20) Cucumbers are a great summertime snack or side dish. Lucky for me they grow like wild fire in the garden. I always have too many cucumbers. I like to soak them in rice vinegar and a little sugar. There is no recipe. I'm a dumper. Little bit of this and a little bit of that. Rice vinegar organic sugar cucumbers thinly sliced water Store covered overnight in fridge. Sure you can add onions, green peppers, red pepper flakes and so on. This is just what I do. Did you know: Cucumbers are 90% water which makes them super hydrating and also nutrient dense. You can eat more with out adding a ton of calories. Besides all that water helps flush out toxins. Very good for alkalizing the body. (reposted from 7/20) So it's all about roasting today. Another wonderful fall side dish. This week I was challenged to do a root dish. uh yeah. Let's not talk about that burnt kale ok... haha. The rest of it was delicious. If you take anything from these posts it's that nothing is perfect. I chucked the kale and ate the rest. The end. This month is going to be about root vegetables and why not? It's fall. I love cooking squash and pumpkins. I would cook more if I knew what to do with them. Today I made some ginger carrots. Seriously easy peasy. Roasted Ginger Carrots
